Every Residence that crosses the centuries keeps a hidden room. Ours lies just below, where the vaulted ceiling holds stories better than any book.

The underground heart of the Residence

The wine cellar of La Torre dei Canonici is one of the oldest and most evocative rooms of the dwelling. Vaulted ceiling, brick left bare by the restoration, low and warm light: everything invites you to slow down. Carved out of the original fifteenth-century spaces, today it welcomes aperitifs and toasts during the private events hosted at the Residence. A few tables, candles, carefully chosen bottles: it is the room that many of our guests recall, once they return home, among the sharpest memories of their stay.

A room that speaks on its own

Few words are needed to describe our cellar: it is enough to walk down the few steps that lead inside. The vault is original to the Quattrocento, never rebuilt or repainted during the restoration: the bricks were fired six centuries ago, the air under the vault stays naturally cool, the sound of the countryside fades. On the table, a curated selection of seven great Upper Piedmont reds, chosen from small producers of the territory. A few tables, candles, carefully chosen bottles: the space takes care of the rest.

Aperitifs, toasts and private moments

The cellar is not open to the public every day: we open it during the private events hosted at the Residence – weddings, corporate dinners, anniversaries, formal evenings – and for occasions built on request for our overnight guests. It is the right place for an aperitif before dinner, a welcome toast at a wedding, a quiet pause during a working day at the Mill. For full dinners we move to the Old Mill rooms – the cellar is best at seven or eight guests under the vault.
